The Hostellerie le Castellas, a 17th century residence, is located on a small street in the heart of the village of Collias. Drawing on the placement of the houses, Madame Aparis has succeeded in turning the enclosed courtyard into an oasis of greenery, a garden a la Monet, with a small swimming pool like a Roman bath tucked away below, creating a restful place for reading while relaxing in a lounge chair, for example. A place favourable to creativity for an artist, painter, sculptor... And why not find inspiration as a writer, with a glass on one our region's fine wines? On the terrace, where you can enjoy lunch under the wisteria, in the garden where you can dine in the evening, where you can savour the cooking, full of flavour, colour and aroma, of our chef Jérôme Nutile. At night, filtered light illuminates the terrace where you find wrought iron furniture, Provencal fabric, palm trees and leafy vines creeping up the old stone walls. Every room has a different artistic style.
